Santorini Tomato Rissoles

Take one onion cut it down to small ,fry it for a little time.Put the fried onion in bowl to cool down.
Use the small Santorini tomatoes(cherry tomatoes) in pieces about 100grams add self-raising flour about 100grams the onions you have fried some spearmint ,basil a little salt ,pepper and a small taste of sugar.Mix it good to a thickish but moist pasteleave,put the mix in the refrigerator for at least 2 hours.
After that time, heat up a big frying pan with olive oil about 2 cm and add a spoon of the mix for each Tomato Rissole.Turn them once..Fry them until they have a light golden color.Serve immediately.

In a stewpan add 4 measures of water ,one measure of Fava ,salt & pepper and a whole onion cleaned up.When the fava boils turn the oven down and let it boil slowly for 30 - 45 min and mix from time to time.Add water if needed.The fava after some time will get to be a pulp.It is ready to serve!
You can serve it in a deep dish adding olive oil and fresh onion ,cappers and some lemon.
